By taking the free run juice from predominantly Pinot Noir grapes off our elevated Rhymney vineyard we have created a Rosé that can be enjoyed chilled with food or as an aperitif.
The fruit began its journey by spending only 24 hours on skins, giving it a bright blush pink colour. After the short skin contact, we took the Saignée and transfered it into a stainless steel fermenter to begin primary fermentation. Saignée is the process of bleeding off the juice after limited contact with the skins (pronounced ‘Sonyay’).
The vibrant colour, complex aromatics and juicy texture come from the addition of small amounts of Shiraz and several other secret varieties to complement the freshness and delicacy of the Pinot Noir. Enjoy it slightly chilled with a platter of soft cheese, figs and olives this Summer.
