2020 Great Western Cabernet Sauvignon
TASTING NOTES
Colour: Very dark red with a bright purple hue.
Bouquet: Deeply scented with layers of aromas including mulberry, blackcurrant, graphite, and tobacco leaf. Hints of cedar and cocoa.
Palate: Supple but rich flavours of black fruits with soft acidity and smooth lingering tannins.
Cellaring: This youthful wine is a great expression of the variety in Great Western. It is possible to enjoy this wine now with food, but it will soften and gain complexity over the next 5- 20 years.
Pairing: This wine tastes great with Wagyu beef meatballs in a rich sauce, and fresh pappardelle.
Vintage: A hot and dry growing season meant the vines ripened quickly and crops were lower than average. Sufficient water supply ensured the grapevines remained in good health and a cool February ensured all the natural acidity was retained at harvest. The grapes had bundles of concentrated flavour and vibrant acidity.

Delivers a nuanced interpretation of the grape, proving once again that cabernet is right at home in the Grampians. Briar, bush mint, bay leaf, bracken and earth here, a dollop of vanillin oak and concentrated black fruits there, with taut tannins laying the groundwork for a long, brilliant future. Rating: 95 points
