For last night’s dinner Julie prepared a rotisserie Pork joint wrapped in seriously crunchy crackling, accompanied with a wicked scalloped potato dish cooked in no less than three cheeses (parmesan, mozzarella and a creamy cheese and chives), with a creamy garlic sauce base. As per our normal roles, my responsibility is that of sommelier (yes we party together regularly to the sound of music). You might be surprised, but I took a punt and opted to pull a Bests 2017 Cabernet Franc (received in the last delivery) out of the cellar. We are compelled to communicate as it was an absolutely marvelous experience on all fronts and the wine was a little different which made it all the more outstanding. You have produced a wonderful experience in this particular wine.
Aside from acknowledging your skills, the purpose of making contact is to express the hope that those who appreciate wine, do consider all that Australia has to offer in terms of wine diversity, and not just the fashion and ‘go to’ varietals, it is a far more rewarding experience.
